Raw Crunchy Caramel Slice
This is one of my favourite raw treats to make - mainly because it doesn't even taste like a 'healthy' caramel slice! My dad and boyfriend love this slice as well as everyone else who's tried it, so I know it's good. And even better, it's pretty easy to make.
RECIPE
Biscuit base:
1 cup medjool dates (soaked for 20 minutes in water)
1 cup almonds
1 cup cashews or macadamias
Put all in food processor/thermomix and blend until biscuity-consistency is achieved. Press into a lined tray and set aside.
Caramel layer:
1 cup medjool dates (soaked for 20 minutes in water)
2T Coconut Magic coconut oil
1 tsp pure vanilla extract
Pinch of sea salt
1/4 cup water
1/2 cup chopped almonds (optional for crunchiness)
Place the dates, oil, vanilla and salt into the processor and blend until smooth, add the water slowly bit by bit. Pour onto the base and sprinkle with the chopped almonds. Place in freezer.
Chocolate:
3/4 cup cacao powder
1/2 cup maple syrup
1/3 cup Coconut Magic coconut oil (or raw cacao butter, melted)
1/4 cup water
Blend the ingredients except water, add water slowly bit by bit (do not over water). Pour over the caramel layer and place back in the freezer for at least one hour.
