Choc-Peppermint Icecream Bites

As a child, I always loved mint choc-chip ice-cream... and as an adult, not much has changed (except that now I wouldn't eat the one made from cow's milk). So in an attempt to replicate my long-lost after-dinner love, fuel my desire to get creative, and most importantly - eat chocolate - I made these super easy, super delicious minty chocolate icecream bites.

Ingredients:

3 ripe bananas

Small handful of fresh mint

1 tsp peppermint extract

1 tsp spirulina

2 T coconut oil

1 tsp natvia Norbu sweetener (you can use stevia or another sweetener instead)

Chocolate:

1/2 cup cacao butter

1/2 cup cacao powder

2T Coconut Magic coconut nectar (alternatively use maple syrup or other sweetener)

Method:

1. Process icecream ingredients until well-combined and smooth. Mine was the consistency of a milkshake.

2. Pour into a mould (I used a ceramic tin) and place in freezer until set, probably about 5-6 hours.

3. Take out of the freezer, remove from mould, and slice into bite-sized squares.

4. On a separate tin line with baking paper.

5. Make chocolate sauce by combining all ingredients (for cacao butter you will need to melt it first).

6. Dip squares into chocolate sauce and transfer onto the lined tin (this is where things get a little messy!)

7. Place back into the freezer to set for at least another hour before eating. Yum!
