Banana & Coconut Bread

This delicious bread is gluten-free, dairy-free, egg-free, vegan and paleo! You can't really get a more allergy-friendly bread than that. My mum described this as "Vegan food people won't know is vegan" which is her way of saying it tastes pretttty great :).

Ingredients:

2 tablespoons dessicated coconut

1 1/2 cups mashed very ripe banana

1 cup firmly packed coconut sugar (I use coconut magic)

1/2 cup coconut oil (I use coconut magic)

2 tsps gluten-free baking powder

1 tsp mixed spice

2 1/2 cups extra dessicated coconut

1 1/4 LSA (linseed, sunflower and almond meal)

Method:

1. Preheat oven to 180C. Grease pan with a little coconut oil and then coat the base and sides with dessicated coconut. Shake out the excess coconut.

2. Combine banana, coconut sugar, coconut oil, baking powder & spice in large bowl, stir in extra coconut and the LSA. Spread the mixture into pan and smooth the surface.

3. Bake the bread about 55 minutes. Stand in the pan 10 minutes then turn, top-side up, onto baking-paper-covered wire rack to cool.
